The word intake means the particular timing in which the number of people is accepted by an educational institute, especially in a college or university. UK/CANADA university accepts student applications for three terms a year. This three-time phase is known as the intake.
Usually, there are 3 intakes available. The September (Autumn) , January (Winter) , and May (Summer) intakes.

The September Intake is the primary or major intake of the year.

The January Intake is a secondary intake. It is not so popular because there are a limited number of vacancies in universities and programs across the country. This intake is a great opportunity for students who missed the September admission deadline or need extra time to complete their study plans to begin their studies in the UK without having to wait another year.

The May Intake, has limited number of institutions or universities open for admission. It is best for the international student who missed the September or January intake. As an international student, if you need more time to prepare, you can choose this intake to study abroad.
